While studying at the Paro Taktsang monastery, I ate the same food as the monks. What I learnt there changed my thinking, and when I got back to England I decided to continue with a vegetarian diet – including quite a few dishes I’d learnt how to cook in Bhutan, most of which use very hot chillies! Mrs Francis, my housekeeper, doesn’t really approve of what I eat, and insists on cooking me good Yorkshire food – without the meat!
